Why soak the potatoes in a bowl of ice water before frying?

You will need a bowl of ice water. Peel the potatoes, cut them and immerse them in water, taking care to add ice cubes. Leave them like this for at least minutes (ideally , a few hours even if possible by regularly adding ice cubes when they melt). Why soak the potato in ice water? In this way, excess starch on the surface will be removed. This will prevent your fries from sticking together during frying. Also, very cold potatoes, when dipped in hot oil, form a crust on the outside that will keep them crispy after cooking.

Crispy and tasty recipe: parmesan-crusted fries
Let’s now go behind the stove to concoct tasty crispy-crusted fries, such as the ones you eat at the restaurant or in your favorite fast food restaurant. Yes, no need to move to satisfy your gluttony, thanks to this recipe, you can prepare it in your kitchen!
For this, you will need food starch. Starch is naturally present in potatoes, but an extra layer is needed on their surface.
– Frying oil
– A pinch of salt
– 1 teaspoon garlic powder
– 2 tablespoons grated parmesan
– 2 tablespoons cornstarch
– 1 tablespoon paprika
– 4-5 large potatoes
Method of preparation :
Peel the potatoes, cut them and squeeze the juice. Then wash them in very cold water, then drain them through a sieve or an absorbent towel (you can of course follow the tip presented above). In a bowl, combine the cornstarch, paprika, parmesan, garlic powder and salt. Put the potato sticks in the bowl and mix them well so that they are completely covered with the mixture. You can even use a zip lock bag to mix them better and avoid overflowing.
Put the oil in a frying pan on the heat and when it is hot, add the potatoes little by little. Stir occasionally to fry them evenly. Remove the fries with a spatula and place them on a plate lined with paper towel to absorb the excess oil.
